With a couple of chopped boiled eggs, celery, onion, and perhaps some dairy-free avocado oil mayo, you’ve got yourself a healthy, quick lunch alternative.
Last week was Earth Day, and this week on Friday, April 28, is Arbor Day. Did you know the first American Arbor Day was originated by J. Sterling Morton of Nebraska City, Nebraska, at an annual meeting of the State Board of Agriculture held in Lincoln? In 1872, an estimated one million trees were planted in Nebraska.
Other upcoming National Days include: National Adopt a Shelter Pet Day, National Raisin Day, National Oatmeal Cookie Day, and National Hair Stylist Appreciation Day, all on Saturday, April 29.

Most people exist, that is all.” –Oliver Wilde “If you cannot do anything about it, let it go. Do not be a prisoner to things you cannot change.” –Tony Gaskins “Do just once what others say you cannot do, and you will never pay attention to their limitations again.” –James R.
